    I’ve tried several cast iron pans in hopes of getting one that actually performed the way traditional cast iron pans are supposed to perform.

    I tried lodge, which was terrible, frankly useless. I bought a Lancaster brand pan, which was a considerable improvement over lodge. But still nothing approaching “nonstick”. So I tried one of yours. I think it was #5. Everything sticks. Even using a large amount of butter or oil, fried eggs stick. Scrambled eggs stick. Not as bad as the lodge, but clearly worse than the Lancaster brand pan. I expect the pan’s interior to be smooth, as the Lancaster. But what appears to be lath marks are readily apparent. Sorry, you sent an email asking. I’m past my return time or I’d be sending it back.

    What we've learned during our years of research and development is that seasoning needs a bit of texture to bond to a pan's surface. We create a unique texture in the surface of our pan during the machining process which is modeled after the mill marks that we found on vintage cast iron cookware. These concentric circles in the pans' surface which will quickly fill in with seasoning as you cook, to create a shiny nonstick patina.

    Usually things sticking like eggs can be fixed with temperature and cook time. Here's some info about cooking eggs in cast iron: https://fieldcompany.mom/pages/cooking-eggs-in-cast-iron. With fried eggs in particular you want to make sure you are getting a maillard reaction, which is what sears the outside and by doing so it should naturally unstick itself from the pan. The keys to achieving this are enough cooking fat, high enough temperature, and then then leave the egg(s) alone until the browning starts to occur (this can take 3-5 min). If it takes longer try a higher temperature. It can be tempting to start flipping or trying to peak under the food, but you should resist this urge until it starts to do so naturally.

    TOO SMALL

    PROBABLY MY FAULT FOR SOME REASON THOUGHT IT WAS LARGER THAN WHAT I RECEIVED.

    OTHER THAN THAT I LIKE IT. I HAVE HAD ISSUES PICKING UP MY CAST IRON SKILLETS AS I AGE AND THOUGHT THAT MIGHT BE MY ANSWER. BUT ALAS I UNDERSTAND WHY IT IS SO LIGHT WEIGHT.

    Even scrambled eggs slip right off the surface. Who needs non-stick coating? My only request would be to make this shape pan in one size larger to scramble eggs for 2-3 instead of just one at a time. This is a great size for individual omelets. Retired chef, here.
